It’s cold outside

Left over turkey breast, spinach and quinoa soup. Fresh baked bread. Soooo good.  I’ll definitely be making this again.

Turkey Quinoa Soup

  • Turkey, shredded
  • Quinoa, rinsed
  • Garlic, minched
  • Carrots, chopped
  • Bay Leaf
  • Oregano
  • Pepper to taste
  • Chicken or vegetable stock

Sautee the carrots and onions.  Toss in minced garlic.  Oregano.  Stock. Add turkey or chicken, and quinoa. Bring to a boil. Add bay leaf then bring it to a simmer until carrots are cooked through.  I then toss some fresh spinach into a bowl and spoon the soup into it.  The hot soup wilts the spinach perfectly.  Mix it together.

Sorry, but I didn’t measure out anything as I tend to do that with many recipes! I also totally recommend Artisan Bread in Five Minutes a Day.  The best bread making book I’ve come across.  It’s basic. It’s simple.  No kneading!!!
